Jean-François Bandet, owner of the artisanal bakery chain Bo&Mie, was surprised to receive a police summons regarding the opening of his Rue Turbigo shop on May 1, 2021, a day when bakery employees must legally rest. Despite operating multiple locations today, Bandet had been unaware of this rule at the time of the opening, which occurred shortly after the end of the third COVID-19 lockdown. At that point, Bo&Mie had only three locations in Paris, but has since expanded to ten across France and abroad, including sites in Spain, Saudi Arabia, and South Korea.
